The new food safety laws:
 
Rules for safe handling of food have been around for some time. Nowadays, there is food safety legislation that covers all aspects of the sale and handling of food in order to protect the health of the public and the interests of the consumer. In pursuant to the Health and Safety at Work Act 1974, employers are required to make sure that their staff receive proper training in health and safety, and food safety. The 1995 Regulations require that all food handlers receive proper food hygiene training, appropriate to their work. Failure to comply with these requirements may result in prosecution.
 
New food hygiene laws have applied in the UK since 1 January 2006, and affect all catering businesses in the UK. Catering businesses are already required to produce food that is safe to eat. Now they must also be able to show, in writing, how to make food safely. They must make sure that they have a food safety management system suitable for their business. This food management system is based on the principle of HACCP (Hazard Analysis Critical Control Point), an internationally recognised and recommended system of food safety management. HACCP helps identify hazards or food safety problems which could arise, and make sure that preventive measures are put into place. To be effective, the procedures shown in the document must be regularly checked and updated by the business management.
